I work at an Italian restaurant with a Cajun influenced menu.
I want to do a road trip through Louisiana and the M delta one day. It's just such an interesting part of the continent and I have heard that the food is as you describe! Watched a film a few years ago which was kind of awesome based in Louisiana - Beasts of the Southern Wild.
