Let me start by saying I am rolling a Warlock in Classic.
I may or not be 60 by phase 2, who knows.
In phase 2 DM comes out and I can pursue my epic riding mount quest.
Buying the mats out right I feel is expensive (Not 1000g expensive, I know) and I feel I can farm some of it if I pick the right professions while I level.

So my plan is to pick professions to like Mining and Skinning to gather Arcane Crystals and Black Dragon Scales then drop them.
Plan on selling the other stuff I gather for buying the other mats for the quest.

I am trying to figure out should I go all out and do those two gathering professions and drop both once i get those mats?
Or maybe go Tailoring and Skinning and once I get the mats, drop skinning for Mining?
I was planning on go tailoring for crafting gear and making bags, I dont want to be gimped while leveling...?

I think my end game is once I get the epic mount I was going to be either Tailoring/?? or Alch/Herb, once everything is all said and done!

So I guess my question is should i go all out with both gathering professions or have Tailoring my main for bag making (shards) and gear and swap between both gathering professions once I get all the mats for the quest?

Kind of a side question, whats a good second profession if you take Tailoring, besides Enchanting, thinking end game here?

To be honest I would personally get tailoring and skinning in your situation. There could be problem to get nodes at the launch so I would chose the safe bet.

I am not really worried about nodes since the things I am farming for are in the Burning Steppes so gather professions need to be like 250 i think and I would be close to 60 by then. So launch won't be an issue. Cause I can always go back to level up if I fall behind. But idk

I like to have tailoring on the first cloth char that I make so I can get bags, gear etc. It's relatively easy to level and gives a lot of good gear which will make leveling a breeze. You could also do alch/herb to make the potions you need for the warlock mount which would save a lot of gold

Tailoring + any gathering profession is nice for money. Tailoring + Engineering if you don't need to make money off your primary professions. Engineering is just too good and frankly, fun :D
You could also roll Tailoring + Alchemy for nice money. The Arcanite Transmute is a free 5-10ish gold every 2 days and crafting all sorts of potions and elixirs usually nets a decent enough profit. Keep in mind that if you level Alchemy you can do Arcanite transmutes as soon as you reach level 35. If you transmute every 2 days and it would take you a month to hit 60 from 35, you will have made between 75 and 150 gold just from those transmutes. It adds up very quickly.

Listening to the C2C podcasts and combing through other discussions it seems like the safe bet, especially while leveling, is to go tailoring + skinning. I might not even grab tailoring at first so that I can just gather and get money since most of my cloth will go to first aid as I level anyway.

As a warlock you will eventually want Tailoring for the Bloodvine set. You will also likely want engineering because it is incredibly valuable. For making gold from 1-60, skinning is the only profession that makes a lot of revenue without stifling your leveling progress. At max level, herb makes a LOT more gold than mining in most circumstances. Instances where mining surpasses herb often involve farming arcane crystals and using specific methods like the DM arcane crystal farm.

Often people will say to level your professions as you go as it will save you time later and I tend to disagree. Competing for nodes and keeping your professions up wastes valuable time from an efficiency standpoint. The cost of opportunity for delaying your progress towards 60 is just too high regardless if you are hardcore or casual. Going back later on and buying your professions up or gathering while zones are less populated is a surefire way to increase your efficiency overall.

On my warlock I take skinning 1-60 and enchanting to DE unneeded items. At 60 I determine if I can make some gold with devilsaur leather... If the answer is, no, I drop enchanting and grab herb to start farming gold. I use skinning/herb until I have the gold I need and then go herb/engi for gold/utility. A strong case could be made here to go herb/tailoring to use robe of the void https://classicdb.ch/?item=14514. On ZG patch I drop herb and take tailoring for the bloodvine set, at which point you should have your economic situation stabilized. There are scenarios where I may opt to go a different route, but this is the general guideline that most raiders will follow unless they have a specific reason to go a different route for their guild.

We will have to see what farming methods present themselves in Classic as this will surely impact the value of each proffession. For example, how does layering impact devilsaur farming? This could completely change the value of skinning so my plans may change. This could either drastically increase the opportunity for me to get skins as I can violate layering to earn quick gold OR this could make it far easier for everyone to farm devilsaurs, thus increasing supply and reducing the value of devilsaurs overall. One of many instances that may shift the value of professions.

You should be less concerned about the specifics of what you need to grind and more concerned with what nets you the most gold per hour. You can always convert your gold into needed items at a later time.

I framed my answer from an efficiency standpoint designed for a player who is looking to push content and progress as OP stated...

Of course with any of these conversations its always good to leave the disclaimer *be what you want to be because everyone/everything is valuable/viable, just to avoid needless headbutting.

Instead of going mining just for Arcane Crystals and going skinning just for Black Dragon Scales, I'd go for your main professions (Enchanting+Tailoring is the most common for locks, but you can even go for tailor/enchant + herb to make the most money) and make money that way, and buy whatever mats you want.

Leveling mining+skinning only for these items, then dropping the two skills, then selecting your main skills sounds like an immense time reserved (read: wasted) just for your class quest. I'd honestly trade the items for services / buy them outright with gold. Remember that the time spent on (re) leveling your actual professions could be used elsewhere (i.e.: grinding) to make more money anyway.

Also note that the prices for the warlock/paladin mount quest mats will most likely rise (read: sky rocket) just before DM releases, which my gut tells me is still going to be 3 to 6 months after release. So you have plenty of time to buy them when they are cheap.

I like this idea!

Because when I played my Priest in Vanilla, I was Alch/Herb and really loved farming herbs and making potions!
I did drop herb for enchanting for disenchanting my Tier 1, for some reason, then went back to herb and it took less than a day as 60 to get back to 300!

Sounds like a good way to make money!
Buy a bunch of those mats early and re sell them once that patch hits and profit!

I think I will go tailoring and skinning!
Get my skinning mats then see where I am at then!

If I get lucky and find a Staff of Jordan and make 500 gold, I could buy the other mats!
If not maybe mining and once im done with tailoring and mining, go alch/herb.

Once Bloodvine comes out drop herb get it then back to herb, to stay herb/alch, my first love!

Maybe but WoW is a long game and enjoyable!
I find it fun to do stuff like this!

I know I had more time back then but I am not going to speed to 60 and speed to Naxx so I definitely have the time and patience to jump around.
Also I have done it all in Vanilla! So there is nothing left for me to do, sure clear Naxx but its not needed and not a goal of mine! I just want to do enough to do MC and BWL again as well as the easier raids like AQ20 and ZG.

I'm pretty sure you can 'fill' a profession slot by simply levelling up Enchanting to lvl 5 and keeping it until you're ready to maybe grind something up after you have mounts.

This lets you DE certain quest rewards, unwanted dungeon loot, you could do BoEs on a bank alt but you wont have to wait for the mail delay and finally it doesn't take too long to achieve all you need to do is self enchant you and a few friends with some +hp or make a wand for your alt.

So one of my plans for my warrior might just be to get enchanting to 5 and take skinning.

After I have my level 40 mount possibly drop both to get Mining/Blacksmith, or keep skinning until lvl 55 when I'll finish off the last 5 levels in dungeons grinding Pre-BiS.

This might let me grab a little bit of devilsaur leather early with a couple of friends before it gets locked down....hopefully :)

Likewise there is 'The Beast' to skin or even MC hounds if you're really looking to hang on to it until power levelling BS.

I do plan to go Armour Smith and most of the plans are not available until Dire Maul is out...so that could swing it.

For my Warlock it'll be Tailoring and Guild Enchanter. If I do the above with the Warrior the Warlock might take skinning to have some free silver and easy access to bag production. Then use the mats from the Warrior to power up that enchanting on Guild members..
