I'm leveling a hunter alt and wondering if I can just use any pet I like or if there are certain ones I should try to track down.

Generally you can use anything. But if you want comfortable leveling, boars are good for fighting mobs and holding aggro. Cats are overall great - good for both PvE and PvP, and certain rare cats like Broken Tooth are even better than the rest.
